2018 Jeanneret Stand & Deliver

Stand & Deliver is an individual vineyard Shiraz from one of the highest vineyards in the Clare Valley at 510 metres above Sevenhill. The vineyard always produces an intensely flavoured wine with a very distinctive character. The vines are 25 – 30 years old.
The grapes are picked solely on flavour and were crushed and destemmed to several open fermenters and fermented with wild yeast. The wine spent 8 days on skins before pressing to tank where it spent 159 days on its lees. It was then racked to oak, all of it French, with 24% new.
The barrels were never racked, just frequently topped up, and carefully monitored.
After 21 months in oak the best barrels were selected and blended prior to bottling in March 2021.
No fining, no filtration.

Something suitably luxuriant and lavish, so why not Beef Wellington? Venison, wild boar and duck would all be good too served (of course) with a Stand and Deliver sauce.
